Mediterranean Chicken Wrap Recipe

Mediterranean Chicken WrapI would classify my diet as mostly Mediterranean in nature. The traditional Mediterranean diet makes liberal use of fruits, vegetables, beans, pasta, rice, cereals and other grains; only moderate amounts of protein from fish, poultry and red meat; and the near-exclusive use of olive oil.

This recipe is a great example of an easy and healthy Mediterranean-styled dish. This recipe is comprised of fresh, unprocessed ingredients. These wraps are crisp and flavorful and are a breeze to make.

Ingredients

  • 2 grilled chicken breasts cubed
  • 1 bag of spring salad mix
  • 1/2 cup chopped red onion
  • 1 sliced avocado
  • 10 chopped kalamata olives
  • 10 sliced grape tomatoes
  • 1/4 cup goat cheese
  • 4 wraps. For the wraps you can use any kind of flatbread or tortillas. I recommend the spinach or sun-dried tomato variety.

Directions

Spread some goat cheese on flatbread and pile on the toppings as you choose. Fold and eat. Serve with a glass of pomegranate juice. This recipe yields 4 wraps.
