Butternut Squash Soup with Curried Squash Seeds

My wife loves Butternut squash soup. It took me a wile to warm up to the idea, but when I did, I was glad that I tried it. It’s a nice treat for this time of year. Try the recipe below. It sounds like it would be absolutely delicious. It serves 4-6.
You’ll need:
non-stick cooking spray
1 Tbs. butter
1 Tbs. olive oil
1/2 medium yellow onion, minced
3 small russet potatoes, peeled and diced
1 medium butternut squash (about 3 pounds), peeled, seeded and diced (reserve seeds)
5-6 c. chicken broth
1 tsp. ground cinnamon
fresh cracked pepper and kosher salt
1/4 tsp. curry powder
chopped parsley
