Omega-3 Eggs
Eggs are a big part of my diet and I enjoy them about any way you can prepare them: scrambled, over-easy, hard-boiled, poached, egg sandwiches, egg-salad, and even deviled eggs. I used to worry about the negative impact eggs might have on my health because of the mixed reports regarding cholesterol and eggs but I’ve discovered that eggs really are a healthy food choice. Eggs are an excellent source of protein and they provide many vitamins and minerals, including vitamin B12, riboflavin, and vitamin D.
As with everything in my diet I am always trying to find healthier sources of the foods I love. I ran across Omega-3 eggs in the supermarket once when they were out of the free-range eggs I normally buy. Omega-3 enriched eggs are produced by changing the diet of the hens so that it contains 10-20% ground flax seed. Flax seed contains higher amounts of the Omega-3 fatty acid Alpha-Linolenic Acid or ALA. ALA improves cardiovascular health by raising HDL-cholesterol (the good cholesterol) among many other benefits. This small about of omega-3 might not seem like much but every little change you can make to your diet will certainly add up. The eggs I buy contain 250 mg of Omega-3 per egg and 300 ug Lutein per egg.
Omega-3 eggs look like normal eggs and taste just like normal eggs. I eat these eggs for the health benefits but I also eat them because I feel they taste better. Crack open a regular egg and an omega-3 egg and you can see the difference. The yolks from the omega-3 egg are bigger, brighter, and thicker. Try omega-3 eggs the next time you make an omelette and see the difference yourself.
Omega-3 eggs are a great discovery for an egg lover like me who never thought they could improve on something as perfect as an egg.
